Why does an air purifier sometimes show good air quality and then suddenly jump?

I’ve seen people mention their PM2.5 numbers suddenly increase after cooking, cleaning or even opening a door. Is the purifier actually detecting these small changes?

Mine does this whenever someone cooks or starts cleaning. I thought it was faulty at first then realised naaa it’s me who is creating the fault.
